Sugar and Spice Brookie

Ingredients

  • For the Brownie  ·   
  • semi sweet chocolate chips  ·  1 cup 
  • butter, melted  ·  6 tablespoons 
  • sugar  ·  1/2 cup 
  • egg, whole  ·  1 
  • vanilla extract  ·  1 teaspoon 
  • all purpose flour  ·  1/2 cup 
  • cocoa powder  ·  1/4 cup 
  • salt  ·  1/2 teaspoon 
  • semisweet chocolate chips separated by half  ·  4 ounces 
  • For the Cookie Dough  ·   
  • butter, room temperature  ·  1/2 cup 
  • sugar  ·  1/2 cup 
  • brown sugar  ·  1/2 cup 
  • vanilla extract  ·  1 teaspoon 
  • egg, whole  ·  1 
  • salt  ·  1/2 teaspoon 
  • baking soda  ·  1 teaspoon 
  • baking powder  ·  1 teaspoon 
  • cup all purpose flour  ·  11/2 cup 
  • Herbies Sugar-n-Spice  ·  1 teaspoon 

Instructions

For the Brownie

Using a double broiler or sauce pot melt the butter and add half of the chocolate chips. Melt until both butter and chocolate is incorporated and then add in your sugar and stir until the sugar is melted then take the bowl off the heat

In a separate bowl crack one egg and slowly whisk the chocolate mixture into the egg bowl. Whisk until all the ingredients are fully incorporated. Now add in your flour, cocoa powder and salt whisking all ingredients together until smooth. Then add the other half of the chocolate chips, folding in and then put aside.

For the Cookie Dough

In a standing mixer, cream the butter with the sugar and brown sugar. When it's creamy add the vanilla extract and the egg and mix until smooth.

In the same mixing bowl, adding a tablespoon of vanilla extract and the other egg, using a spatula scrape down the sides of the bowl, add a tablespoon of salt, baking soda, baking powder, along with the flour and Herbies Sugar-n-Spice. Turn the mixer back on and mix until smooth, then fold in the remaining chocolate chips.

For the Sugar-n-Spice Brookie

In a glass pie dish or a baking pan lined with parchment powder and an oil spray, place the chocolate brownie on the bottom of the dish. Taking the cookie dough dollop big drops on top of the brownie until you just see ribbons of chocolate underneath. Sprinkle the Herbie’s sugar and spice across the top and you’re ready to bake.

Bake for 30 minutes in a preheated oven at 375°F until cookies are a nice golden brown and the bottom is cooked and not loose. Let cool at least 20 minutes before serving.
