Sometimes you just don't feel like cooking a big dinner and just want something soft to snack on while enjoying a great bottle of red wine. Jen Jen in our office feels like that five nights a week so she came up with this simple little vegetarian dish that will work with our Ravish Mélange.
Peel and chop carrots into 1 inch long pieces. Slowly boil until tender but not mushy. Drain to a bowl saving ¾ cup of the carrot water for later.
Meanwhile use a rolling pin or a food processor and crumble the crackers.
In the bowl with the carrots, add ¾ of the fine crumbled crackers , onion and butter. Mash all ingredients together including the ¾ cup saved water and one cup of the shredded cheese, saving the second cup for later.
Place the mixture in a greased medium casserole dish and sprinkle the remaining cup of cheese and the remaining ¼ of the crackers on top. Cover and bake at 400 ºF for 20 minutes.
Let stand 5 to 10 minutes before serving and enjoy with Williamson Wines ~ Melange!
