Russet Potatoes, peeled and diced

Instructions
Start by heating a sauce pot over medium heat.
Melt the butter and then add the bacon and cook until crispy and caramelized. About 8-10 mins. Add the diced onions to the pot. Cook for about 4 minutes while constantly stirring so all the brown bits come off the bottom of the sauce pot.
Once the onions are soft, add the potatoes, chicken broth, and cook until the potatoes are fork tender; they will begin to incorporate more into the soup after 20 minutes on medium low heat.
Finish by adding the cream and cook for an additional 15 minutes or until the soup starts to thicken from the potatoes. After about 10 minutes of simmering, add Herbie's Gunpowder Spice Blend for the last 5 minutes of cooking.
