Pre heat oven to 350 degrees.
For the Cinnamon Swirl:
In a small bowl, whisk ½ cup sugar and 1 tablespoon of Herbie's ground cinnamon together.
For the Bread:
In a separate large bowl whisk the flour, baking soda and salt together in a large bowl.
In a separate medium bowl whisk the egg and ¾ cup granulated sugar together until the sugar is dissolved. Whisk in the oil, sour cream, milk and vanilla extract. Pour the wet ingredients into the dry ingredients, then whisk to completely combine. Avoid over mixing. This will make 3 cups of batter.
Prepare your loaf pan by spreading room temperature butter around all of the sides and then lightly dusting the sides with sugar. Shake the pan around so the sugar is evenly distributed in the pan.
Pour/spread half of the batter in a prepared loaf pan. Then add 1/2 of the cinnamon sugar mixture to the pan. Followed by 1/2 of the dried cranberries and evenly distribute them through out the batter.
Carefully pour/spread remaining half of the batter and cranberries evenly on top. The top layer of batter will want to stick to the cinnamon sugar filling, making spreading a little tougher to do. But use a spoon to carefully spread it out as best you can.
Sprinkle it with the rest of the cinnamon sugar. Using a butter knife or small thin spatula and swirl side to side through out the loaf about 5-7 times. Avoid over swirling the batter.
Bake for 40-45 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan.
Enjoy while it is warm or wrap it up and slice it the next day!
Jenny's Tip: - Eat it is toasted and with a spread of butter, it’s so amazing! It’s also delicious with cream cheese frosting, peanut butter and even with a honey drizzle, however, this makes the best French toast because it’s packed with much more flavor than normal sandwich bread.
