Grilled Peach Salad

Very easy to prepare when peaches are in season this salad makes a nice change from normal salad courses. Nothing can prepare you for how good this tastes and when you try it with the Viognier - WOW!

Ingredients

  • rice wine vinegar [d]  ·  3 tablespoons 
  • tarragon leaves, chopped fine  ·  1  teaspoon 
  • [d] kosher salt  ·  1/2 teaspoon 
  • 1 tablespoon extra-virgin olive oil  ·  1 tablespoon 
  • Dijon mustard [d]  ·  1 tablespoon 
  • extra virgin olive oil [d]  ·  1/2 cup 
  • kosher salt  ·  1 tablespoon 
  • crumbled goat cheese (preferably Laura Chennel)  ·  1/2 cup 
  • small young mixed salad greens  ·  5 cups 
  • chopped pecans  ·  1/2 cup 
  • Peaches, pits removed & cut into wedges (skin optional)  ·  3 

Instructions

Preheat grill to medium-high heat.

Combine the rice wine vinegar and Dijon in a small bowl. Slowly pour the olive oil into the bowl, while constantly whisking to emulsify the vinaigrette. Season with tarragon and salt.

Place the peaches in a bowl and drizzle with olive oil. Sprinkle with salt and toss well. Place the peaches on the grill and cook for 1 to 2 minutes on each side.

Place the salad mix in a large bowl. Add chopped pecans, goat cheese and grilled peaches. Drizzle the salad with dressing and toss to coat. (Optional: Finish the salad with a drizzle of balsamic or pomegranate molasses).

Serve with Williamson Wines Viognier.
