Goat Cheese Gnocchi
A quick and easy gnocchi recipe, made with goat’s cheese and parmesan.
Ingredients
truffle butter

3 tablespoons
egg yolks
·
3
Parmesan cheese
·
2 tablespoons
flour
·
3 tablespoons
goat cheese
·
4 cups
chicken broth
·
1/2 cup
short rib cooked
·
1/2 cup
each salt & pepper to taste
·
1 tablespoon
sofrito
·
1/2 cup
Instructions
In a bowl smooth out the goat cheese with a spatula
Add an egg yolks and combine with goat cheese
Once smooth add salt
Next add 2 tablespoons of flour and combine until smooth
Boil water in a shallow pan
Quenelle goat cheese mixture and poach in boiling water (Quenelle is a technique which makes a three-sided oval shape out of soft, malleable dish components, like this goat cheese mixture by using two tablespoons - shown in our video)
Once cooked transfer to an ice bath to cool
Add chicken stock to a hot pan
Sauté sofrito in the chicken stock until golden color
Add the short rib material to the pan and incorporate
Take the Gnocchi out of the water bath and place in a dry pan
From there and then add the Gnocchi i to the cooking pan seasoning with salt and pepper to taste
Next melt in the truffle butter stirring continuously
Serve directly from the pan to the plate and spoon the juices over the top of the Gnocchi
Top with grated Parmesan cheese and garnish with chives and enjoy
