Partial to Memphis or Kansas City-style smoky ribs? A group of crazy Australians created this tasty American-style rib spice mix and a recipe to go with it.
- racks baby-back pork ribs · 2
- Herbie's Rib Spice Mix · 2 tablespoons
- SAUCE MIX ·
- salt · 1 teaspoon
- cider vinegar · 2 teaspoons
- soy sauce · 2 teaspoons
- tomato ketchup · 3 tablespoons
- honey · 1 teaspoon
- Herbie's Rib Spice Mix · 2 teaspoons
- soft brown sugar · 1 teaspoon
- cloves garlic crushed · 2
Sprinkle ribs with spice and rub well over both sides. Cover and set aside for 1-2 hours. Preheat oven to 320°F, place ribs in pan and cover with foil. Cook in oven for 1 hour. Mix sauce ingredients together and set aside. After 1 hour, increase oven to 420°F Remove foil from ribs, brush sauce over one side and return to oven for 15 minutes. Then turn ribs and brush sauce over the other side, return to oven for 15 minutes. Remove from pan and cut through between rib bones. Serve with Williamson Heritage Shiraz.
For a Vegetarian or Vegan version of this recipe replace ribs with eggplant or portobello mushrooms and pay attention to time and temperature settings as they will vary with the replacement food you have chosen.
