Few varieties on Earth are as recognizable as Cabernet Franc.

With its fine texture, its mid-level depth and pungency there are very few bottled as single varietals as we have done with Sultry.

Sultry starts with an inviting blue-purple color. The nose is stunning! It has an abundance of elegance presented in a seductive fashion with an exotic roasted nut and dark fruit character and then comes that sweet caramel, cranberry with a touch of licorice and spice in an intoxicating aroma leaving just a hint of lavender and violets.

In the mouth Sultry is full and rich with its berry and plum flavor. Sultry finishes with a very light black cherry flavor, full, rich and satisfying and just to make things interesting, a hint of herbal and mineral notes that add a beautiful complexity to its profile.

A drop dead gorgeous wine with amazing intensity and purity of aromas Sultry is a fine-toned, red-fruited wine built on poise, not power.

This is a super wine that can be enjoyed upon release but shows age worthiness indicating it could be laid down for ten to twenty years.

Fleur Sauvage Chocolate Tasting with Bill

The tendency of most chocolates with ganache (flavored fillings) is to show a dash of flavor and then let the cacao take over leaving simply a residual taste of chocolate.

Paired with our Seduce Cabernet Sauvignon however the wine initially overpowers the cacao, then highlights the flavors of the ganache and finally retains much of the three flavors, wine, ganache and cacao on the palate for a delicious extended time. Here are a few examples:

Pumpkin Spice Caramel - The wine melds with the ganache and then highlights the cacao holding it on the palate forever.
Mint Dark Chocolate - The wine highlights the mint and brings the cacao, mint and wine together - spectacular finish.
Brown Butter Caramel - The wine and caramel come together in the center of the palate then leave the chocolate - but wait for the finale - they are all still there together.
Candy Cap Mushroom - The wine takes the mushroom right to the earth in the center of the forest - a delicious sensation.
Orange Dark Chocolate - The wine spreads the orange across the palate keeping it going on with a light finish of chocolate.

The usual end of harvest celebration has been replaced with an overwhelming sense of gratitude. After a good season the wildfires came right as harvest was wrapping up in the valley, thankfully we had an estimated 90% of the grapes already in.

This year’s harvest tested our winemaking experience and had us calling upon the knowledge from our sister wineries overseas to help us be ready for any issues but even with everything that has happened, this year’s vintage is excellent.

French Oak for 22 months, approximately 40% new, 40% one use and the balance neutral.
