Seduce Cabernet Sauvignon 2016

The 2016 Seduce Cabernet Sauvignon is characterized by the deep color, good tannic structure, controlled concentration and elegant sensuality.

Seduce shows an extraordinary duality being soft yet powerful, elegant yet open, adding distinction to its reputation as a beautiful Sonoma-style Cabernet Sauvignon.

A deep dark complex nose of black fruit with a heady density quintessential of mountain fruit.

Remarkably balanced on the palate with complex layers of black fruit, cedar, herbs and spice, all with just the right intensity and yet still balanced and elegant.

The finish shows great tannin structure, soft yet powerful indicating its aging potential.

This is a super wine that can be enjoyed upon release but shows age worthiness indicating it could be laid down for ten to twenty years.

The 2016 Seduce is dominated by Cabernet Sauvignon blended 46% each from our Sonoma Mountain and Dry Creek Valley vineyards and completed by Cabernet Franc, Malbec and Petit Verdot from our mountain top vineyards on Atlas Peak, 2,000 feet above the Napa Valley.

Blending the two Cabernet Sauvignons in this way gives the finished wine its extraordinary duality being soft yet powerful, elegant yet open and approachable.

Following harvest and sorting the grapes undergo a cold soak period of five days kept at a cool temperature, allowing for color and flavor extraction. The Cabernet enjoys a warm fermentation accompanied by gentle punch-down on the cap reducing as the sugar changes. Following fermentation extended maceration involves keeping the fermented wine in contact with its skins for an additional period to yield a softer tannin structure.

Climate

The 2016 growing season got off to an early bud break and moderate weather prevailed throughout summer. The lack of heat waves kept sugar levels and phenolic maturity in sync allowing ripening to progress slowly and predictably. Late August was unusually cool and cloudy, nicely extending hang time without excessive sugar accumulation winding up with exceptional color in the reds.
French Oak for 22 months, approximately 45% new, 45% one use and the balance neutral.
