Pecorino cheese is semi-hard and compact having a straw-yellow color with sparse holes. The crust is smooth with a white-pale yellow paste. Aromatic with hints of herbs the taste is strong and pleasantly spicy. Outside it shows to a classic dark brown color.
From the town of Fonni, the highest town in Sardinia, Pecorino artisanal sheep's milk cheese has a maturation period of more than four months; the shape is cylindrical with flat faces with straight sides; the crust is smooth, consistent, light brown.
