Pecorino di Rocca is a delicious cheese made in the Tuscan tradition of cheese making. This classic pecorino is made using fresh pasteurized sheep milk following an ancient artisan Tuscan recipe. The paste, dense and flaky, is not grainy on the palate, but melts on the tongue.


Quick Quesadilla Recipe

  • 4 flour tortillas
  • 4 slices Mild Provolone cheese
  • 4 oz. Pecorino cheese, shredded
  • 1 cup fresh salsa

Heat skillet over medium-high heat. Add flour tortilla. Cover half of the tortilla with one slice of Mild Provolone and one ounce of Peperoncino. Fold tortilla over and heat on both sides until cheese is melted and tortilla starts to brown. Repeat with remaining tortillas and cheese. Serve sliced quesadillas with fresh salsa. Add shredded chicken, pork or beef to the filling for a heartier offering. Serve with a glass of Amourette Chardonnay or for a red wine try Embrace Grenache.
