Background

Over the last 20 years there has been an emerging interest in edible Australian plants, including spices and herbs used to enhance the flavor of food. Restaurateurs around Australia have been bringing the wonders of native flavors to Australians and tourists alike; nevertheless, widespread use of Australia’s native flavors has developed very slowly.

Because Australian cuisine uses nearly every culinary spice and herb in some way we have a unique opportunity to use a global mix of herbs and spices, incorporating the little known but wonderful Australian native spices.
