With its flavorful cumin seeds, this cheese makes a memorable lunch or appetizer platter.

Serve slices of Leyden, served at room temperature, with cold-cuts, spicy-sweet honey mustard and a good dark bread such as rye or pumpernickel. These can be served warm or cold and topped with slices of ripe tomato and parsley or fresh arugula.

Temperature & Humidity - Refrigerate the cheese at a cool, stable temperature, ideally around 35–45 °F (2–7 °C) in your fridge. The crisper drawer is a good spot because temperatures and humidity are more stable there.

Wrapping & Breathability - Wrap in wax paper, cheese paper, or parchment paper rather than airtight plastic. This lets the cheese breathe while still protecting it from drying out. After wrapping in paper, you can loosely cover it with a bit of plastic wrap or place it in a partly open container — just don’t seal it airtight. Avoid Freezing

Leyden cheese (Leidse kaas in Dutch) is a semi-hard cheese flavored with cumin and caraway seeds, produced in Leiden, the Netherlands. Made from pasteurized cow's milk, Leyden resembles Gouda in shape (round and flat) but has a lower fat content. This Dutch cheese is produced both in factories and traditionally on farms in the historic Leiden area.

The cheese developed in the Leiden region where butter was the primary dairy product; farmers used the leftover skim milk to make a leaner cheese, which explains its lower fat content compared with other Dutch cheeses.
