La Bufala Nera is an unusual and intriguing cheese. Made in Tuscany from a mixture of cow's and buffalo's milk, the cheese in then coated in beeswax and dyed black using natural dyes.
The result is an oblong, smooth piece of cheese the resembles a river rock. Under the smooth exterior, you will find a young, springy paste with a sweet, milky and mild flavor.
This is a delicious cheese to simply sit and eat with olives or peppers and a glass of Joy Sauvignon Blanc in the warm days of summer.
NOTE: The black rind is inedible and should not be consumed.
