Although a member of the same family as Galangal, Kenchur has its own distinct aroma that is quite perfumed and different from Galangal. 

Use in Asian cooking in much the same way as ginger and galangal and added to curries and stir-frys. Pictured here sprinkled over sticky rice with shredded coconut.

Kencur, also Zedoary (Kaemferia galanga) is sometimes erroneously known as lesser galangal. This ginger like root has a unique, camphor flavor and should be used sparingly. Kencur powder can be used as a substitute.

Soak in boiling water for 30 minutes, use 1/2 - 1 teaspoon of powder for 1 inch fresh root. If not available replace quantity given with half ginger and half laos (galanga)
