Heritage Shiraz 2012


Dark plum in the glass with rich aromas of blackberries, cherries, and vanilla that are very inviting.  

After decanting for around an hour, the wine shows intense flavors of dark berries with smooth silky tannins.  This Shiraz is voluptuous with a smooth finish of black pepper and lingering vanilla.  A very elegant Shiraz.  

With plenty of tannin to foster aging, the wine is still not too aggressive to be savored immediately, but will definitely benefit from some more time in the bottle.

An utterly majestic Shiraz, sleek and seamless, with a structure embracing both expressiveness and grace. The intensity of fresh blueberry and plum fruit holds attention until the nuances kick in, offering glints of exotic spice, coffee, cocoa, bay leaf and mint.

Shows tremendous presence without a lot of weight, the smooth silky tannin, while present is not even close to getting in the way.

This wine will allow you to add your own herbs and spices. Imagine roasted pork loin well seasoned with garlic and onions or bratwurst, spicy lamb dishes and cold meats with chutney

A very elegant Shiraz from the Williamson Estate in Dry Creek Valley.

The vineyard consists of Australian Shiraz and French Hermitage clones sustainably farmed to produce low yields of the finest quality fruit.

We harvested at optimum ripeness and took the fruit through several days of pre-fermentation maceration followed by fermentation and then thirty days of post-ferment maceration to encourage the berries to surrender all their flavor.

The wine is made from only free run juice so the delicate flavors were preserved.

Two years in French Oak - 40% new / 30% one use / 30% neutral
Whole clusters fermented in small 6-ton open-top stainless steel fermentation tanks with punch downs starting at three per day and gradually reducing to once per day.
