Clarissa Vin Rouge 2017
An elegant, refined wine, that is in perfect balance, There is a purity of fruit found in this wine. Clarissa was uniquely designed by Bill to complement medium-soft foods that include some of the medium strength spices.
Production for *Clarissa* has historically been limited and the 2017 vintage produced only 500 cases.
Vinification of the five noble wines that will make this blend takes place in small, temperature controlled, open-top stainless steel tanks. The wine is aged in French oak barrels for 22 months. The blending for Clarissa takes place after about six months in barrel as we feel it is better to blend the wines before the influence of the wood has progressed too far.
French Oak for 22 months, approximately 40% new, 40% one use and the balance neutral.
