Chantilly is a Chablis-inspired Chardonnay of quiet charm and bright intention, pale gold in the glass, with aromas of fresh pineapple, tangerine, and a soft sweep of honeysuckle.
A California Chardonnay, Chantilly is built with a deliberate nod to Chablis discipline—precision over power, clarity over ornament. Light oak influence is used not as a signature, but as a framing device, allowing the fruit and site to speak without interference.
The nose opens clean and restrained: citrus peel—lemon and lime—followed by green apple and just-ripe pear. Beneath that sits a cool mineral line, flint and wet stone, with subtle white florals and a faint saline note that suggests coastal air carried inland.
On the palate it is dry, light to medium in body, driven by racy acidity that runs straight and unbroken through the wine. Orchard fruit and citrus remain in focus, supported by a steely backbone and a precise mineral structure that gives the wine its linear tension and controlled energy. Oak is present, but quiet—integrated into the structure rather than expressed as flavor.
The finish is long, clean, and refreshing, leaving a persistent impression of citrus and stone, with a mouthwatering edge that lingers well beyond the final sip.
Best served at 55°F, with at least one hour of decanting to allow its structure to fully open and align.
The 50-year-old Chantilly vineyard, planted to Clone 4—California’s most widely respected Chardonnay clone and the foundation of many of its finest wines—provides the structural backbone for this expression.
Sustainably farmed in our Estate vineyard, the fruit is fermented in carefully selected French oak barrels and then matured for 12 months. A measured mix of new and seasoned barrels is used deliberately, not to imprint overt oak character, but to preserve purity of fruit and site. The intention is restraint: to avoid the familiar California markers of vanilla, cinnamon, toast, and coconut often associated with all-new oak maturation, and instead allow the wine’s natural tension, minerality, and citrus precision to remain at the forefront.
All of the barrels come from French cooperages with whom we have had an association for over twenty years. Selected from two French forests, the wood is air dried and coopered in Burgundy over a five-year production period and finished with a special “toasting” suited to the delicate characteristics of our wines.
