Chantilly is an attractive Chablis-inspired wine, pale gold, with fresh pineapple slices, tangerine, and honeysuckle.

A crisp, mineral-driven Chardonnay with bright citrus and subtle floral notes. Elegant, precise and terroir-focused, grown on the river bank it shows the Dry Creek Valley cool vineyard hallmark - a little chalky minerality with racy acidity and a refreshing, saline finish.

Chantilly, a California Chardonnay inspired by the Chardonnay wines of Chablis. Only lightly oaked, emphasizing the grape's flavor purity and terroir.

  • Appearance: Pale straw to light gold with greenish highlights, brilliant clarity.

  • Nose: The nose is fresh and restrained, showing citrus (lemon, lime), green apple and pear. There is distinct mineral and subtle white flowers, perhaps a hint of salinity.

  • Palate: Dry, light to medium-bodied with bright, racy acidity. Crisp orchard fruit and citrus flavors, with a very slight steely edge and a nice mineral backbone, giving a clean, linear structure.

  • Finish: The finish is long and refreshing, leaving a mouthwatering impression.

  • Ageing Potential: 20+ years, developing layers of truffle, leather, tobacco and cedar while retaining elegance and precision.

Decant for at least one hour and serve at 55°F

In developing Chantilly, Dawn and Bill visited Chablis to review the wines and traditional winemaking techniques of the region. Our 50-year old Chantilly vineyard is planted to Clone 4, California's most famous Chardonnay clone, responsible for many fine wines.

Sustainably-grown in our Estate vineyard this wine is fermented in carefully age-selected French oak barrels then barrel-aged for 12 months. Selecting some new and some used barrels we do not allow the wood to impart the characteristic California Chardonnay oak flavors of vanilla, cinnamon, toast, coconut, etc., that today are associated with ageing wine in all new barrels.

This wine was fermented and aged in French oak barrels of which 25% were new.

All of the barrels come from French cooperages with whom we have had an association for over twenty years. Selected from two French forests, the wood is air dried and coopered in Burgundy over a five-year production period and finished with a special “toasting” suited to the delicate characteristics of our wines.

Only 880 cases produced. Our vineyards are farmed to the code of sustainable agriculture using traditional techniques, based on strict control of yields, manual harvests and numerous quality specific tasks that are carried out by hand throughout the year.

Little or no chemical fertilizers are used. Selection and planting of cover crops and their return to the soil provides additional organic nutrients allowing our vines to reach an advanced age and produce outstanding grapes.
