Chantilly is an attractive Chablis-style wine, pale gold, with fresh pineapple slices, tangerine, and honeysuckle.
In developing Chantilly, Dawn and Bill visited Chablis to review the wines and traditional winemaking techniques of the region. Our 50-year old Chantilly vineyard is planted to Clone 4, California's most famous Chardonnay clone, responsible for many fine wines.
Sustainably-grown in our Estate vineyard this wine is fermented in neutral French oak barrels then barrel-aged for 12 months. Using neutral barrels that do not impart the characteristic California Chardonnay oak flavors of vanilla, cinnamon, toast, coconut, etc., that today are associated with ageing wine in newer barrels.
Up to August moderate daytime temperatures and cool nights created excellent conditions for ripening and usually our California grape harvest starts in August extending through October.
The 2022 harvest was fast-tracked by a heat wave which came as a bit of a surprise however the white varieties and Pinot are showing excellent chemistries in the winery and getting grapes in a little early protects them from any further hot weather and the risk of wildfires.
