Chantilly Chardonnay 2019


Chantilly is an attractive Chablis-style wine, pale gold, with floral aromas of white peach, lemon and butterscotch.

Following good winter rainfall and a cool spring, the 2019 summer growing season was near-perfect.

Fortunately, the rain came when the flowers budded minimizing any shatter issues. The cool spring slowed down some of the fruit growth allowing the grapes time to develop and ripen, then the hotter August temperatures provided the right amount of stress at the right time for flavor development.

French oak for 12 months - 33% new, 33% one use, balance neutral.
Only 220 cases produced. The winemaking technique includes barrel fermentation in a matrix of one, two and three-year-old French oak barrels, located in a cool temperature barrel room.
