Chantilly Chardonnay 2018
Nice citrus freshness you might look for in a nice French Chablis.
Made by a crazy Australian from great California fruit, Chantilly Chardonnay 2018 is a blend of our Chantilly vineyard and lower-yield reserve Estate vineyard, with the target of making a very nice Chablis.
The aroma is pure lemon zest with a hint of floral background. In the mouth a smooth Chablis like structure with a muted limestone center that is at once there, then gone. The finish is long and smooth, just begging to be wrapped around a crab cake or lobster with drawn butter.
Based on the principal that two nice Chardonnays can make a nice Chablis, the blend we found best was: 75.5% Chantilly Chardonnay and 24.5% Amourette Chardonnay.
The Chantilly added nice floral overtones to the wines superior backbone derived from the pure, powerful Amourette. Since it was over 75% Chantilly we decided to call it 2018 Chantilly.
Some new French oak with the majority being neutral Burgundy barrels.
