Capricious is a handmade, washed curd goat cheese from Petaluma, California, hand rolled in an old european style.

The curds are washed before the cheese is formed which helps draw out some of the moisture and develop flavor. The curds are then bundled into cheesecloth and hand formed into a wheel, so the cheese has a rustic look, somewhere between square and round, with a thick, crusty, heavily pebbled rind.

It is aged naturally, uncovered, in a cave benefiting from the cool, coastal air. The cheese is fruity, reminiscent of an aged Mahon but with an unmistakable goat flavor.

Featured in May 2010 Cheese Club paired with Williamson Allure MERITAGE, soft Bordeaux style wine.
