Bay Blue has good blue marbling, a creamy, fudge-like texture with a beautiful natural rind, mild blue mold pungency, mellow and earthy with notes of malty toasted grain then a sweet, salted caramel finish.
To simply enjoy, try it in slices of apple, non-flavored crackers or a crusty bread like Sourdough. Crumbles nicely for topping salads, etc.
Gives a nice taste kick to scrambled eggs.
