Don't think much of corn in a salad - this dish will change your mind forever.
Light grill to medium high heat.
Shuck Corn and grill on all sides until lightly charred on all sides. Remove and let cool.
Using a sharp knife, cut all of the kernals off the cob. Set aside.
Mix together the mayonnaise, lime juice, truffle cheese salt, cotija and minced chives.
Add the corn to the mayonnaise mixture. Serve garnished with the chive flowers (or more minced chives if flowers are unavailable) and a little more cotija cheese.
