Made with pasteurized sheep's milk and aged for 70 days these three inch tall wheels have a soft, moist texture that is part of their appeal.
The paste is butter colored and smooth, with no eyes. The brown butter and caramel aromas are reminiscent of crème brulee. Creamy on the tongue and as it melts, sweet and salty flavors emerge. Subtle with low-key sheepiness, P'tit Basque's creaminess gives way to toasted nut, garlic and vanilla.
