An elegant, refined wine, that is in perfect balance, There is a purity of fruit found in this wine. Clarissa was uniquely designed by Bill to complement medium-soft foods that include some of the mid-strength spices like cloves, garlic, anchovy, onion, mustard, etc.
Dense. opaque with a dark ruby edge the color promises depth of flavor to come and it doesn't disappoint. A nose that makes you want to wait and continue to enjoy the beautiful, heady, complex aroma. Pretty, dusty Cabernet character in the mouth with an incredible, balanced cornucopia of dark flavors, licorice, blackberry, walnut and sultana very alive yet subdued and totally in control just like Clarissa herself.
Production for *Clarissa* has always been historically small averaging only about 400 cases each year.
Vinification of the five noble wines that will make this blend takes place in small, temperature controlled, open-top stainless steel tanks. The wine is aged in French oak barrels for 22 months. The blending for Clarissa takes place after about six months in barrel as we feel it is better to blend the wines before the influence of the wood has progressed too far.
French Oak for 22 months, approximately 40% new, 40% one use and the balance neutral.
