Beehive - Promontory Habanero
Ogden’s fourth-generation dairyman, Clint Wade owns Wadeland Dairy - 350 acres near the salty marshes of Utah’s mineral-loaded Great Salt Lake. Here the nutrient-rich soil feeds the lush alfalfa that Clint’s Holstein and Jersey cows love to eat. In turn they produce a rich, creamy whole milk.
Cheese makers Tim Welsh and Pat Ford transform Clint’s milk into Promontory, an aged Irish style cheese. Buttery, full-bodied and lively with snappy, citrus and fruity notes the Promontory cheese warms on your tongue and leaves a subtle sharp note in your mouth.
With a healthy dash of dried Habanero flakes the cheese is aged a minimum of 8 months to develop flavor and allow the pepper heat to permeate the cheese. This cheese is a favorite with those who like a little spice in their life and pairs perfectly with our Williamson Tango Malbec.
